Every hello ends with a goodbye

Who would have thought you would be reading my last entry? Congratulations to you. I hope you can bake for your loved ones now. I know i didn't help you much in term of the recipes and the methods, but one thing that you should know is that, the methods are all the same. I've gave you one recipes and methods for each types of desserts. I've gave you 2 cakes with different methods. 1 bread and that's all you need to know and you can do other kind of bread by knowing only one. 1 apple pie and you can do a lot with that methods. 1 croissant, well knowing how to make croissant is like knowing how to make 5 other kind of pastries. 1 cookie, it's more than enough because you can make 10 other recipes by only knowing one. And 1 icing, and that's all you need. :)

To be honest,baking is my passion. Back in 2013, while I was studying bakery and confectionery for 6 months in Giatmara was the best day of my life. To earned and to received the professional certificate was an honor. I hope we share the same passion because this passion is a sweet one. And I hope you will not stop baking :)

Step 15: How to make an icing

Well hello,so this is the last step. I saved the best for last. And this is the best part, the icing! in the ancient time icing is different they covered cakes with powdered sugar or other materials were introduced in the 17th century. There are many types of icing in this world such as gum paste [24], fondant [25], whipped cream [26], butter cream [27], ganache [28], royal icing[29], marzipan [30]  and so much more.

My favorite icing is Ganache. It is so simple and you will learn how to make it today :) you will need :-

Ingredient
1 cup Whipping Cream
1 cup dark chocolate

steps:
1. Heat the whipping cream (do not boil)
2. Pour the whipping cream onto the chocolate and stir slowly. 

you can use the ganache at that very moment using a piping bag and a nozzle of you choice. And if you want to use the ganache to cover the whole cake, while in the process of making the ganache loose a couple of tablespoon of the chocolate so that the ganache mixture will become thinner.

This is a sample of ganache, gum paste and butter cream icing that I have made earlier :)



My second and third favorite is the gum paste and fondant. you can just buy the instant gum paste and fondant at your nearest bakery shop. :)

Step 14: Pavlova?

Hello! I hope your Croissant tuned out well :) okay today I'm going to help you to make a Pavlova. What is a Pavlova anyway? It is a meringue cake with a crisp crust and soft, light inside and usually topped with fresh soft fruits and whipped cream. Pavlova is originated from New Zealand and today you'll make one! Lets start!you will need :

Ingredients 
4 nozz large egg whites
1 cup castor sugar
1 tbsp corn starch
3/4 tsp cream of tartar
1 tsp vanilla
1 cup of whipped cream
soft fruits

steps:
1. Pour in the egg whites in a mixing bowl. using a mixer whisk it with sugar until soft peak.
2. While whisking add in the cream of tartar and the vanilla. whisk till medium peak.
3. Fold in the cream of tartar slowly in the egg whites mixture so that the volume and air won't lose. 
4. Prepare a baking tray and parchment paper.
5. Lay the mixture on the tray and bake for 150 degree Celsius for 80 minutes. 
6. Let cooled and assemble the whipped cream and topped it with some soft fruits like kiwi, strawberries and peaches.

Step 13: Croissant, shall we?


Hello, I hope you are doing well. Can you guess what is the cat doing? If you guessed that the cat is rolling dough then you're right! We are making something from France today. hehe Well, actually today's entry is about Croissant. So lets get started. you will need :
Ingredient 
400 gm diamond flour
8 gm yeast
20 gm castor sugar
5 gm salt
6 gm bread softener
20 gm butter
200 gm croissant butter
1 nozz egg

steps :
1. Add in the flour, salt, sugar, softener and yeast. put the dry ingredients in an order and do not mix it all together .yet. Because the salt will kill the yeast. using a mixer, mix well. then add in the butter. mix well.
2. Pour in the milk, a little at a time. and the dough is ready. neat the dough and let rest in the freezer. 
3. After the dough has harden, neat the dough until it is square. put the croissant butter in the center and fold. let to rest in the freezer for 20 mins
4. Take the dough out and neat till it's thin and the first fold we called it as the single fold. let to rest in the freezer for 20 mins.
5. Take the dough out and neat till it's thin and proceed with the second fold which is the double fold or the book fold. let to rest in the freezer for 20 mins.

6. Repeat single fold. let to rest 20 mins. repeat double fold let to rest 20 minutes.
7. Neat the bread till its thin and cut in triangles.

8. Put on a baking tray that have been greased with shortening and bake for 10 minutes for 180 degree Celsius.
9. After it is bake, put on cooling rack to cooled and served.

Step 12: Apple pie, will it be your first pastry?

Well hello! So how was it? mind sharing with me your progress? Thank you. Okay, continue! So apple pie? are you ready? But before that do you know where apple pie are from? Well, they are from England. you will need :
Apple filling 
1/2 sugar
1/2 brown sugar
3 tbsp all-purpose flour
1 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
7 cups thinly peeled tart apples
1 tbsp lemon juice

Sweet pastry
250 gm butter
125 gm icing sugar
2 nozz egg
417 gm red rose flour
1 tsp salt
1 tsp vanilla

Steps: 
1. Add in the butter and sugar, beat until Medium Fluffy.
2. Add in the eggs and vanilla, mix well.
3. Add in the red rose flour and salt, mix well.
4. Dough is done. Let the dough rest in the chiller for 15 - 20 mins. 
5. In a small bowl, combine the sugars, flour and spices, set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture to coat.
6. line a 9 inch pie plate with bottom crust, trim pastry evenly. Fill with apple mixture; dot with butter. Roll out remaining partey to fit top of pie. . Place over filling. Trim, seal and flute edges. Cut slits in pastry.
7. Beat egg whites until foamy, brush over pastry. Sprinkle with sugar. Cover edges loosely with foil. 
8. Bake at 375 degree Celsius for 25 mins. Remove foil and bake 20 - 25 mins longer or untl crust is golden brown and filling is bubbly. Cool on a wire rack.

Step 11: How to make your first bread?

Hello! so, your first bread hah? I bet you must be excited. of course you are. Okay lets start! But don't worry, it's not that complicated. It's a piece of cake! You will need :

Ingredient A
500 gm Diamond flour 
75 gm castor sugar
1/2 tbsp salt
17 gm yeast
1/2 tbsp bread softener
1 tbsp milk flour

Ingredient B
125 gm water
1 nozz egg
1 tbsp condensed milk
1/2 tbsp yellow coloring

Ingredient C
50 gm butter
30 gm shortening

Ingredient D 
2 nozz boiled potato

steps :
1. Using a mixer put in all the dry ingredient (A) and add butter and shortening (C) and mix well. A+C
2. Add in the Boiled potato in the dough *make sure that the boiled potato is cooled before being added*
3. Add in the egg. mix
4. Pour in the water, a little at a time. and make sure the water are cold.
5. Add in the rest of ingredient B

The dough is done when the texture is elastic. Neat the dough until it soften and let it rest under a wet towel for 10 minutes. Do not let it over rest. Neat the dough after resting and size it according to your preferable size. and bake in the oven for 18 minutes at 160 degree Celsius.

When done cool it on a cooling rack and you can serve it. Enjoy and Good luck :)


Step 10: Chocolate chips Cookies?

Hello! How's your cheesecake doing? you did great right? I know you did and because of that, im going to continue with the next step which is the chocolate chip cookies. Everyone love cookies! cookies is a drop cookies originated from the United States and features chocolate chips as its distinguish ingredient. and chocolate chip cookies is very easy to make. And I'm going to show you how it's done. For this recipe, you'll need :-

Ingredient 
125 gm butter
1/2 cup icing sugar
1/2 cup brown sugar
1/2 tsp vanilla
1 nozz egg
1 3/4 cup self rising flour
1/2 tsp salt
125 gm chocolate chip
60 gm walnut (chopped)
steps:
1. Beat the butter and sugar (both) until fluffy. add in the egg, salt and vanilla.
2. Add in the flour, walnut and chocolate chips, a little at a time.  (do not add all in one time)
3. Bake for 130 degree Celsius for 30 minutes.
4. When it is done, put on cooling rack to cooled and serve it with tea.


This is my mummy's recipe and I have been eating them since I was little. i loved her cookies and I'm sharing the goodness with you. Enjoy :)


Step 9: Oreo cheesecake, your second cake!

Hey there, glad that you are still here. so I guess you are enjoying my entries. And today's entry is all about oreo cheesecake. Who on earth doesn't love cheesecake?everyone does! You willl need :

Ingredient A
250 gm Philadelphia cheese
60 gm castor sugar
60 gm corn flour
60 gm butter
6 nozz egg yolks
2 tsp lemon zest
2 tbsp lemon juice 
1/2 tbsp vanilla
1 cup UHT Whipping cream

Ingredient B
60 gm castor sugar
6 nozz egg whites
1/8 tsp cream of tartar

Ingredient C
1 pack crushed oreo
30 gm melted butter

Steps :
1. Beat in the cheese, sugar and butter until fluffy.
2. Add in the egg yolks, lemon zest, lemon juice and vanilla, mix well.
3. Add in the corn flour and the whipping cream mix well.
4. Beat Ingredient B until light and fluffy (make a meringue, medium peak)
5. After the meringue is ready, mix it SLOWLY in the cheese mixture using a spatula.
6. Mix oreo and the butter all together to make the based of the cake. 
7. Prepare a baking tin with the oreo based and pour in the cheese mixture and put some whole oreo in the mixture so that it will look like a design. 
8. Bake the cake using a water bath method (laid the tin on a tray and pour hot water around the baking tin)
9. Bake for 180 degree celsius for 1 hour.

Step 8: Meringue?

Hello there, So how was your first cake? I know it was a success. congratulations! You just made your first cake! I am so excited for you. okay now, enough about that. Lets focus for today. Today's entry is about Meringue. How to pronounce meringue? It's Me-rang.

What is a meringue actually? Meringue is a type of desert or it can also be a mixture. Basically it is made from whipped egg whites and sugar and whipped till fluffy and white. In some recipes other ingredients are added in the mixture such as vinegar, cream of tartar [23], corn flour or vanilla to make their own kind of dessert.

And this is how cream of tartar looks like ;


Who really invented the meringue? Well, it has been claimed that meringue was invented in the Swill Village in Meiringen [21] and improved by an Italian chef named Gasparini in the 18th century.

The question here is how to make the perfect meringue? It's easy! when you are prepping the egg whites make sure that no water and egg yolks [22] gets into the whites. If so, the egg white will not fluff and your meringue will be a disaster.

Soft peak medium peak or stiff peak? These are the types of meringue mixture. While in Giatmara, my teacher taught me really well about meringue. It's very easy and very quick! I will show you a picture of how the types of meringue is

Step 7: Your first cake!

Welcome back, so are you ready for you first cake? I know that you have been patiently waiting for this day to come. Today you will learn how to bake a chocolate sponge cake. Well, lets get started. you will need :

Ingredient
- 5 nozz eggs
- 166 gm castor sugar
- 133 gm cake flour
- 33.33 gm cocoa
- 66.6 gm water
-16.6 gm ovelette (cake stabilizer)
- 83.33 gm Butter (melted)

That is all that you'll need for you first cake. but hey, that not it. Noe, I'm going to teach you on how to make it. now that is something right? Okay. 

Here is how it goes, mix in all of the ingredients together in a mixing bowl except for the melted butter. this method is called "the all-in- method" 

Using a mixer, mix all well until fluffy. Once it is all fluffy and white, mix in the melted butter and using the spatula and stir slowly. And the cake mixture is done :)

Before pouring the mixture into the baking tins,  grease the baking tins with butter or shortening [20] so that when the cake is bake it won't stick to the baking tins.

Preheat the oven for 10 minutes at 175 degree Celsius. Put in the mixture into the oven and bake it at 175 degree Celsius for 45 minutes. *don't forget to change the baking tins side while it is baking in the oven*

Once the cake is bake to full perfection, take it out from the baking tins and cool it on the cooling rack. And have a taste when it's cooled, Good luck! :)

Hello again! I'm down with a cold today, but don't worry that won't stop me from continuing with the fifth steps. Today's entry is about cakes. The history of cake dates back to ancient times. The first cakes were very different from what we eat today. They were more bread-like and sweetened with honey. Nuts and dried fruits were often added. According to the food historians, the ancient Egyptians were the first culture to show evidence of advanced baking skills. During the great depression one company patented a cake-bread mix in order to deal with this economic situation, and thereby established the first line of cake in a box. In so doing, cake as it is known today became a mass-produced good rather than a home or baker made specialty. Read more  here. [4]

There are thousands varieties of cakes found all around the world for example sponge cake, butter cake, pound cake, strawberry cake, chocolate cake, vanilla cake, black forest cake, banana cake and so much more.

Hey there, I hope you are still here. if you are, thank you :) okay today is about which is better? a hand mixer or a stand mixer? But wait a minute, do you know that there two types of mixer? if you do, then good, if you don't, here's a picture of it.

On the left, is the stand mixer and on the right is the hand mixer. First of all you need to compare. the weight, the price (based on your budget) and the quality. Next, you have to determine the available space you have in you kitchen. 

From my personal opinions, hand mixer or stand mixer, it doesn't matter. As long you have a mixer because, both of them are great. the question "which is better?" begun because of human needs and wants.

Hello there, are you doing well? I hope you are. Okay lets get started. The next step would be purchasing your own oven and mixer, isn't that great? Okay well first of all, in order to purchase a mixer and an oven you must first make a survey of the price, the quality and the warranty. okay now, you are one step away from purchasing your first oven and mixer. 

Next, you have to ask your friends and families for their opinions about the product.  Ask them "is it good?" "is it long lasting?" "is it handy?" because I think opinions from other is good. it helps us to make decisions. Because your first oven and mixer is important for a beginner. 

Lastly, make a wise decision. Because like I said earlier, your first oven and mixer is important for you. Now, if you followed my steps, your future will change. And stay tuned for the next step :)


Step 2 : Using an oven and a mixer, is it hard?

Hello again, today's entry is about an oven and a mixer. Do you even know how an oven and a mixer looks like? of course you do, but if you don't here's a picture of it
for those who don't know, now you know. For a new beginner, people always asked me a series of questions and one of it "is it complicated to use an oven and a mixer?" well the answer is, No. It's not complicated. because the buttons are all straight forward. They don't have hidden agendas. haha I'm kidding. It's not hard using a mixer and an oven. its very easy. 

Next question, "does it cost you a fortune?" well it depends on your budget and the brand. if you have bigger budget, then you can go for the more expensive one but if you don't, you can go for a cheaper one. I recommend you to buy Panasonic, its quite cheap and long lasting. Trust me, I have a mixer and an oven from Panasonic and it lasted for centuries. Last question, is it handy? well yes. It is handy. because it's not that heavy and you can bring it anywhere you want.

Step 1 : Brief introduction on baking

What is baking? Baking or bake is a method of cooking using dry heat in an oven. We usually use the word bake when we are cooking something like cake, bread, pastry or even cookies. No one could really tell where baking really started. Because everyone have their own theory on where it all started. But it is sure that people can never survive without food. But right in the beginning of recorded history there was the discovery of fire making, thus along with light, heat could be generated. Then there followed the discovery of different grasses and their seeds which could be prepared for nourishment. With the help of heat and grain, one was now able to prepare a kind of broth. Hot stones were covered with this broth or the broth was roasted on embers and “hey presto” the first unsure flat bread was created. This ability to prepare stable food radically changed the eating habits and lifestyle of our early ancestors, from being hunters they became settlers. There are so many methods on baking but what about the ancient techniques?  Do you know how they did it in the ancient time? They used hot stones and then poured the mixture onto it. To me. it's amazing how they started all of this. But there is more. Do you know where is the oldest oven located? Well, it is located in Croatia and was discovered in 2014 dating back 6500 [2] years ago.

Hello! On this first entry, I would like to welcome you to my humble blog. So how bad do you love baking but never try or never succeed in baking anything? Well, to stumble upon this blog today is your lucky day, because this blog will help you to become a baker in 15 steps. This blog is based on my personal experience. So I will ensure you that after you're done with all the steps, you can bake with eyes close. Okay, don't do that. I'm joking. Don't close your eyes you might hit the oven or something. hahaha okay.

But to me to be a baker, it's not all about the recipe or how you do it. It's about the history, the tools, the passion. you need to know all of that in order to be a good baker. What i meant to a baker is that I'm helping you girls, mothers, wives or maybe men who love to bake to be a baker in your own home. You can even make a living out of this, maybe. because who knows what the future holds. :)

So before I start with my first step, are you ready? I hope you are, because I will change your life. I will give you one more advantage that will make you special to your loved ones. Because remember girls, men love girls who can bake, trust me. I know :)
